The fermentation process, which can take months or years, involves the action of molds, bacteria, and yeasts, resulting in a tea that darkens and develops a rich, complex flavor profile. Pu Erh tea can be classified into two main types: raw (sheng) and cooked/ripe (shou). Raw Pu Erh is not fermented, while cooked Pu Erh undergoes a piling process to induce fermentation. The tea is often compressed into bricks, cakes, or other shapes, which allows it to age like fine wine, improving its flavor over time.
